Made-from-scratch chocolate mint marshmallows and hot chocolate.  Dare I say, yum? When you think of food in different ways, you start to discover better versions of your favorites that actually support your gut and your entire system, making your go-to comfort foods into uplifting healthy foods.  This hot chocolate with chocolate mint marshmallows is a perfect example with proteins, probiotics and love-inspiring cacao.

Chocolate Mint Brownie Marshmallows and Hot Chocolate

Chocolate Mint Brownie Marshmallows


1/2 cup filtered water, divided

2 tablespoons grass-fed gelatin

1/2 cup honey

1/4 teaspoon Himalayan sea salt

3 to 4 tablespoons cacao powder (additional for dusting)

1/8 teaspoon peppermint extract

Prepare a sheet pan by lining it with parchment paper both directions, allowing the sides to drape over for easy release. 

In the bowl of a stand mixer (or large bowl if using hand mixer), add 1/4 cup of filtered water and sprinkle gelatin to bloom. Set aside. 

In a small saucepan over medium heat, bring remaining water, honey, peppermint extract and salt to a gentle simmer. 

Reduce heat to low and cook for approximately 10 minutes, stirring constantly so it doesn't overflow. Assemble a stand mixer with whisk attachment and bowl with gelatin. 

Slowly, in a thin stream, pour the hot honey mixture directly over the bloomed gelatin while running the mixer on low speed. 

Gradually turn the mixer to high setting and continue whipping until the mixture has increased in volume and is thick and glossy. This should take approximately 15 minutes. 

About 7 minutes into whipping, gently add the cacao powder, one tablespoon at a time. Fold in Truth Bar pieces until well incorporated.

Transfer marshmallow fluff to the prepared pan and spread evenly with a spatula. Set aside at room temperature for at least 2 hours to set but overnight is best. 

Dust the top with additional cacao powder. Remove the marshmallow by lifting parchment paper flaps and transfer to large cutting board. 

Marshmallow should release easily from parchment paper. Coat the bottom and edges with cacao powder, if desired. 

Cut marshmallows into small squares.

Marshmallows can be stored in an airtight container at room temperature for up to 1 week.


Hot Chocolate


1 cup almond milk

1 tablespoon raw cacao powder

1 tablespoon maple syrup

Pinch of pink Himalayan salt.


Combine all ingredients in a saucepan over medium-high heat, using whisk to break up any clumps. Keep stirring until smooth and hot, careful not to burn the almond milk.

Pour into a mug and top with chocolate mint brownie marshmallows.

We have created both Vegan and Non-Vegan bars. Two of our flavors are Vegan and two are Non-Vegan. Our Chocolate Dipped Coconut and Chocolate Dipped Raspberry bars are both 100% Vegan. They're both rich in fiber and essential medium chain fatty acids that are easily digested, which makes them incredibly useful for a quick burst of energy.

Our Chocolate Almond Crunch and Mint Chocolate Chip bars feature a Non-Vegan blend of brown rice protein and whey isolate that supplies essential Amino Acids for a "complete" or "whole" source of protein. Are the bars Peanut Free?

Yes, all Truth Bars are 100% peanut free. We use only high quality almond and sunflower butter.
