Raspberry Collagen Frozen Treat

Here’s a delicious and refreshing sweet frozen treat for summer with a surprise ingredient – collagen! Collagen has a handful of healthy benefits, like helping your skin elasticity and easing joint pain, when added to your diet. Collagen is also great for an extra protein boost and helps in balancing your gut.


Raspberry Gelatin Layer

1 ½ cups fresh raspberries

1 tablespoon fresh squeezed lemon juice

¼ cup coconut sugar

1 tablespoon Great Lakes Gelatin

¼ cup hot water

Dissolve gelatin in hot water. Place all ingredients in high-speed blender and puree.  Pour into a glass loaf pan and refrigerate for 4 hours or overnight.


Nut Milk Layer

1 cup almond or coconut milk

2 tablespoons honey, agave or maple syrup (optional)

1-2 Chocolate Raspberry Coconut Truth Bars

 1 tablespoon Great Lakes gelatin

¼ cup hot water

Dissolve gelatin in hot water.

Blend milk, sweetener, and gelatin mixture until smooth. Pour on top of the raspberry gelatin.  Add the Chocolate Raspberry Coconut Truth Bar on top to mix – OR - place in refrigerator for additional 4 hours and add Truth Bar to top as a garnish. 

To serve, you may want to cut into slices as a loaf or into squares. Either way, it will taste great!
