Tropical Blue Smoothie Bowl

 

Blue smoothie bowls remind me of the ocean! Not only are they a lovely blue color ranging from turquoise to sky blue depending on your ingredients, but they're also filled with blue-green sea algae (or spirulina), one of nature's best superfoods packed with antioxidants, vitamins and minerals. In this version, we went a little tropical with the addition of coconut milk and pineapple.   Ready to dive in?!

 

Ingredients

Coconut Milk (6 ounces, give or take)

1 1/2 bananas, frozen

1/2 cup frozen pineapple

1/2 cup peaches

Handful of blueberries

1/2 teaspoon of blue spirulina powder or more to color or taste (I used Blue Majik)

Frozen blueberries, blackberries and chunks of Dark Chocolate Coconut Truth Bar to top

 

Directions 

Combine all ingredients in a blender or food processor and blend until smooth. Add the coconut milk a little at a time until it’s the consistency you're looking for. If you're looking for a thick, photo- worthy bowl or one where your toppings don't sink, use less liquid for a thick consistency. Add the Blue Majik at the end until it’s the color you like.  If you're looking for a brighter blue, leave out the blueberries and stick to light colored ingredients like pineapple.

 

Variations

Smoothies are infinitely versatile. In this bowl, feel free to add frozen avocado, kiwi, mango, white grapes, or apples. You can also add some mint or lemon if you used enough spirulina to taste the fishy flavor.

To serve, pour or scoop into a bowl and top with frozen berries, chocolate or other toppings.
